Fresh Lettuce Wraps

Dave Prows makes a fresh and delicious fish lettuce wrap

Mi Shu chicken and Tuna wraps

2 Tbslower sodium soy sauce
1 Tbshoisin sauce
1 tsprice vinegar
1 Tbsdark sesame oil
1 Tbsminced garlic
1 Tbsgrated peeled fresh ginger
1-14 ozpackage of cole slaw mix
6 ozshredded skinless, boneless rotisserie chicken meat
½ bunchfresh cilantro leaves
½ cupsliced green onions
12 eachbibb lettuce leaves
¼ cupchopped cashews

•Combine the first 3 ingredients in a small bowl, stiring with a whisk
•Heat a large skillet over medium-high heat, add oil to the pan and swirl to coat. Add the garlic and ginger to the pan and sauté for 30 seconds
•Add the soy sauce mixture and cole slaw, cook for 1 minute stiring frequently
•Add the chicken, ¼ cup onion and cilantro to pan and cook 1 minute or until coleslaw begins to wilt
•Divide chicken mix among the lettuce leaves and top with remaining onions and cashews
•Use the remaining sauce in the pan to pour over the wraps

*Substitute fresh tuna for the chicken
