Quick Tailgate Chili
 
Prep time: 30 minutes
 
Makes about 6 1½-cup servings
 
This Super Bowl-worthy recipe comes together within 30 minutes, and you don't have to peel, chop or mince anything! You can regulate the heat with your choice of salsa - mild, medium or hot.  Let everyone add favorite toppings as desired.
 
1 Lb. ground beef, 85% - 93% lean
1 Tbsp. dried chopped onions
1 (7 oz) can chopped green chiles
1 (16 oz) jar salsa
1 (10 oz) can Rotel diced tomatoes & chiles
1 Tbsp. dried cumin
1 tsp. garlic powder
1 (6 oz) can tomato paste
1 cup water
½ tsp. salt, to taste
3 (15 oz) cans red beans
1 (14 oz) can beef broth
1 (15 oz) can petite diced tomatoes
Garnishes: Tortilla chips, sour cream,
chopped cilantro, tomatoes, avocado
 
1. In a large stock pot, brown the ground beef, breaking it into small chunks with a spatula or fork.
 
2. Add remaining ingredients and stir until well mixed. Simmer 20 minutes.
 
3. Serve with your choice of  tortilla chips, sour cream, chopped cilantro, chopped tomatoes, shredded cheese, shredded lettuce, olives, etc.
 
Makes 6 1 1/2-cup servings.
 
Options: For a smoky touch, add 2 chipotle chiles canned in adobo sauce, plus 1 tablespoons of the adobo sauce. Or, you can add fresh roasted chiles.
