Family Friendly Sushi Bowls
4 (3oz) salmon fillets
4 cups rice cooked
8 sheets nori seaweed, cut into strips
1 cup plain yogurt
1 Tbsp lemon juice
1 cucumber diced
1 large avocado diced
1 green onion chopped
Soy sauce to taste
Fry salmon, over medium heat, in nonstick skillet coated with olive oil for 3-4 minutes per side.
Combine yogurt and lemon juice. Then stir in avocado, cucumber, and onion, mix until coated.
In bowl layer rice, seaweed strips, salmon, then top with yogurt slaw. Enjoy the fresh tastes of sushi, all cooked at home.
