DELICATE SEAFOOD SCAMPI

with angel hair pasta, white wine lemon sauce, basil, shrimp, crab and plump scallops.

Ingredients:

4 oz . Lump Crab Meat

8 16/20 Shrimp

4 Large Sea Scallops

1½ lbs Cappellini Pasta (cooked)

½ Lemon (juiced)

1 Tbsp Garlic

1 Tbsp Shallots

2 oz. Red Onion (julienned)

1 Cup Cherry Tomatoes

½ Cup Dry White Wine

2 oz . Fresh Basil (Julienned)

½ Cup Asiago Cheese

2 oz Butter

1½ Cup heavy cream

Directions:

In a hot sauté pan, sear scallops and shrimp until halfway cooked

remove from pan

Add garlic shallots, red onion, and tomatoes - cook for 1 minute

Deglaze with white wine, and reduce it all the way

Add heavy cream, fresh basil, asiago, crab meat & butter

Reduce until well thickened

Toss all together with pasta, then garnish with basil and asiago cheese
