SALT LAKE CITY, Utah (ABC 4 Utah) - Summertime is in full swing. The means farmer’s market bounty is at its peak. Chef Tom joins ABC 4 Utah with a look at what foods are best to buy this time of year.

Peaches
Look for peaches that give slightly when picked up with no sign of bruising. Peaches do best if they're kept at room temperature. Although they do ripen much quicker on the counter, they become mealy and coarse if put in the fridge.

Eggplant
How to choose a good one- Look for smaller eggplants with smooth/unblemished skin. The fruit should spring back when depressed. Eggplant goes bad very quickly after picking, so use it shortly after buying.
Ratatouille 

Tomatoes
Look for tomatoes with a clean/unblemished skin, and free of bruises and dark marks. Even small dark marks on the outside can mean hidden rot on the inside. Tomatoes should feel heavy, as the heavier the tomato, the juicier the fruit.
Store them on the countertop. The fridge transforms the soft flesh of a tomato into a grainy mess. Keep them on the countertop and eat them quickly!
Caprese Salad  

Peppers
Peppers that are richly colored, firm and shiny. The bigger the section without indents, the easier it will be to cut. They store best when tightly wrapped and put in the fridge.

Apples
Look for firm apples with minimal bruising. If there are leaves still attached, make sure the leaves look fresh and vibrant, and not wilted or dried. Apples keep best at room temperature, unless they're cut. Once cut they should be refrigerated or consumed.
