Spam Musubi

Tonya Shoemaker, from The Living Tradtions Festival, makes Spam Musubi

SPAM MUSUBI

Ingredients:

5 cups cooked Japanese rice

5 sheets Nori

1 (12 oz) can Spam

¼ cup soy sauce

¼ cup granulated sugar

Musubi Press

water

Directions:

1. Fry sliced Spam on medium heat until lightly crispy on both sides.

Mix soy sauce and sugar and then add to pan with Spam in it.

Turn heat to low and cook until sauce is thickened and Spam slices are coated on both sides.

2. Place cut sheet of Nori on clean surface. Place musubi press in middle of Nori widthwise.

Spread enough rice in bottom to fill musubi press halfway. Press rice down with flat part of the press.

You can add more rice if necessary. Place a slice of Spam on top of the rice.

Cover with another layer of rice and press hard to compact all layers.

3. Remove musubi from the press by pushing the whole stack down with the flat part of the press

while lifting the mold upward. Fold one end of nori over the musubi and press lightly onto the rice.

Wet remaining end of nori slightly with fingers dipped in water, then wrap over musubi and

press and seal onto other nori. One down, 4 more to go. Continue until all rice and spam used up!

If not eating right away, wrap with individual logs of musubi with plastic wrap.
