1 cup Mayonnaise
1 cup plain Greek Yogurt
2 Chipotle peppers in Adobo Sauce
1-1½ Lbs. shelled Shrimp (pre-cooked or raw)
1 Tbsp. butter
1 minced garlic
¼ cup taco seasoning
½ cup coarsely chopped cilantro
10 flour tortillas
In a food processor, mix mayonnaise, yogurt and chipotle peppers until the peppers are finely chopped and are blended into a sauce. Set aside.
In a medium hot pan, melt butter and add garlic. Add shelled shrimp and cook until opaque and pink. Sprinkle with Taco Seasoning (do not add water) Mix well until the shrimp is well coated with the taco mix.
On a tortilla, add shrimp, a sprinkling of cilantro and about a tablespoon of chipotle sauce. Squeeze a slice of lime over the mixture and fold over the tortilla to form a taco and enjoy!
