Steamed Salmon with Caramelized Onions and Mango Sauce

use a jelly roll pan or a casserole dish and line it with foil so that the foil extends beyond the pan or dish. Salt and pepper the salmon and place in the foil. Fold the foil to a tent so that the steam is trapped in the foil. Cook on grill on medium heat for around 15 min or in the oven at 400 for 15 min. Check with a fork for flakiness when done. Meanwhile, cook sliced onions in a skillet until onions start to caramelize. Peel and chop mango. When Salmon is done, place on plate and top with sweet and sour sauce, onions and mangos.
