SLOW COOKER SWEET POTATOES
4 lbs. assorted sweet potatoes
2 Granny Smith apples
3 cups cream or half & half
1 tsp salt
½ tsp pepper
1 tsp cinnamon or pumpkin pie spice
½ cup softened butter, divided
Optional: curry powder to taste
Coat bottom and sides of slow cooker with 2 Tbsp of butter.
Toss sliced potatoes and apples together with salt, pepper and spices.
Layer in slow cooker with cream, finishing with final layer of cream. Dot top with remaining butter.
At this point you can refrigerate until ready to cook.
Cook at medium until potatoes are cooked and soft. Exact cooking time and temperature will depend on your slow cooker. Generally I plan on about 5 hours-if slow cooker will be unattended for longer or if you are starting with a cold slow cooker, plan on either a longer cooking time or reduce the heat slightly.
Optional: this can also be whipped after cooking. If you'd like to serve it this way, reduce liquid to 1 1/2 c.
