Serves 2- 4
1 cup onion, diced
1 cup carrot, diced
1 cup peas, fresh or frozen
1 cup corn, fresh or frozen
1 (15oz) can black beans, drained & rinsed
1½ Tbsp tomato paste
3 Tbsp soy sauce
3 Tbsp sesame or olive oil
1-2 lbs. white potatoes, diced
sea salt, black pepper
¼ cup water
Pre-heat oven to 400 degrees.
2. Heat oil in large skillet, sauté onion with pinch of sea salt 1-2 minutes, add carrots and sauté 2-3 minutes. Add tomato paste in hot spot of skillet and let sauté 1 minute, then add soy sauce and blend together well.
3. Add beans, peas, corn and ¼ cup water and mix together.
4. Put bean mixture into an 8 x 8 baking dish and level with offset spatula.
Mashed Potatoes Method:
In a large pot, cover potatoes with cold water, add 1-2 Tbsps. salt, bring to boil. Simmer 15-20 minutes until potatoes are fork tender. Drain potatoes, but reserve cooking water.
2. Return potatoes to hot pot and start to mash. Gradually add cooking water so potatoes have a smooth consistency. Add ¼- ½ tsp. sea salt and ¼ tsp. black pepper or more to personal taste. Drizzle with olive oil and mix together.
Put Dish Together:
Spread mashed potatoes on top of bean mixture and smooth out. Bake 20- 25 minutes. Let stand 5-10 minutes before serving.
