1 Lb Broccoli, Fresh
1 + ½ Tbsp.Lemon Pepper Salt
1 Tbsp. Kosher Salt
2 qt Water
2 qt Ice
Hot Buttons _ Wash and soak Broccoli in cold water for 5 min, this will help remove any
insects that might be lodged within the florets
Prep Procedure 1- Trim Broccoli by cutting each floret and removing stalks , cut florets in half for large ones.
2- In a steam basket, over a small amount of boiling water with a lid, steam Broccoli for 5-6 min.
3- Remove lid several times during steam process to preserve Broccoli bright green color.
4- Dissolve Salts in water and combine with ice
5- When Broccoli is done, immediately submerse in salted ice water.
6- Reserve in cold salted water until cold and serve.
Presentation - Serve as a support side dish for any protein course.
