Grilled Salmon with Mango Salsa
2 mangos, peeled & diced
1 large red bell pepper
2 Tbsp. canola oil, divided
½ red onion, finely diced
1 jalapeño, seeded & minced
1/3 cup chopped fresh cilantro
1/3 cup chopped fresh mint
2 tsp. honey
1 lime, juiced & zested
16 oz. wild Alaskan salmon fillets
¼ tsp. sea salt
Preheat grill to medium heat. Grill red peppers until slightly charred all over, turning every 2 minutes. Remove from grill and let cool.
In a medium-size bowl, toss together chopped mango, red onion, jalapeno, cilantro, mint, honey, and lime zest and juice. Remove skin red peppers, dice and stir into mixture.
Brush both sides salmon fillets with remaining oil, then season with sea salt. Grill for 5 minutes per side(skin side down first) or until flakey. Serve with Salsa.
