8 slices thick crusted sourdough bread
2 Tbsp extra virgin olive oil
2 cloves garlic
½ purple/red onion, diced
Juice from 2 limes
1 large Hass avocado
2 Tbsp fresh cilantro leaves
½ tsp salt
¼ tsp smoked paprika
1 cucumber, sliced
Over medium heat saute diced onion, and whole cloves of garlic in olive oil. Cook until onions are translucent and garlic starts to brown. Set aside.
In a food processor or blender, combine lime juice, avocado, cilantro, salt and smoked paprika. Add half of the onions, and both of the garlic cloves. Process until mixture is smooth.
Lay 4 slices of bread on your kitchen counter, and generously coat one side of bread with guacamole. Place a layer of sauteed onions on top of the guacamole, and then layer the cucumbers on top of the onions. If desired, coat the remaining bread slices with guacamole and lay guacamole side down on top of the sandwich.
You MAY have some guacamole left over. Break out the tortilla chips if you do!
