3 cups finely shredded, unsweetened coconut
1½ cups almond flour
1 cup pure maple syrup
1/3 cup softened coconut oil
1 tsp vanilla powder or 2 tsp vanilla extract
½ tsp. sea salt
3 Tbsp. poppy seed or chia seed
Stir until well combined, roll into balls on pan.
¾ cups coconut oil
4 Tbsp. cacao powder
1 tsp vanilla powder
¼ cup pure maple syrup
Stir until smooth, drizzle over almond joy balls, top with an almond and a little shredded coconut and freeze until set. Enjoy!
