1 Head romaine lettuce
3 chicken breasts
Crumbled Cojita cheese
2 Tbsp. chili powder
1 Tbsp. whole cumin seeds
2 tsp. cornstarch
2 tsp. kosher salt
1½ tsp. paprika
1 tsp. ground coriander
½ tsp. cayenne pepper
Mix taco seasoning in a small jar and save. You will be able to use some of it now and some later if you want. Alternately just use your favorite taco spices.
Boil chicken enough to get it mostly cooked through.
Once chicken is done, shred it into smaller pieces.
Put the chicken into a frying pan and sprinkle liberally with the spices.
Add a small amount of water and cook down for about 5 minutes.
Place the chicken along with the cheese, tomato, avocado and salsa into a piece of lettuce.
Wrap and enjoy.
